Arthur Bryant

He was the legendary "King of Ribs." He transformed Kansas City style barbecue. In 1946, he inherited Henry Perry’s historic pit operations. He revolutionized the traditional vinegar-and-pepper sauce base. He infused it with rich molasses and tomato. This created an international culinary phenomenon. He famously balanced heavy spices into a savory science.

Operating near Municipal Stadium, he built a national destination. He successfully popularized Kansas City's iconic burnt ends. His tables welcomed working-class locals and U.S. Presidents. In 1974, author Calvin Trillin praised his legendary work. Trillin called Arthur Bryant's Barbeque the single best restaurant worldwide. Bryant passed away in 1982. He earned induction into the Barbecue Hall of Fame in 2021. We honor his incredible foundation today.
