A true Southern cornerstone. We take hand-trimmed pork shoulders, heavily coat them in our signature brown-sugar-based Premium BBQ Blend rub, and low-smoke them for over 12 hours exclusively over split hickory wood. The intense hickory smoke yields a rich, dark bark and a robust smoke ring. Hand-pulled to order to preserve the natural pan juices, this tender pork packs a perfect balance of sweet, savory, and deep hardwood smoke.
